This versatile pasta is great for more than just chicken noodle soup!
We know that egg noodles reign supreme when it comes to chicken noodle soup, but don’t let that be the extent of what you do with the inexpensive and fast-cooking pasta. Check out our list of 30 egg noodle recipes for ideas—we bet we’ll have you swapping a bag for your favorite Italian pasta in no time.
Let’s start with the egg noodles themselves. For most of these recipes we’re talking about the “(extra-)broad”, “wide”, or “dumpling” egg noodles that resemble fusilli pasta, but occasionally you’ll want to reach for the “Chinese egg noodles” that resemble lo-mein and can be found fresh or dried. You could even make your own egg noodles, like in our recipes for egg noodle soup or cacio e pepe egg noodles.
Though there are a ton of recipes you can make with egg noodles that don’t revolve around soup, we’d be remiss to not highlight those that do. We’ve got 8 variations on chicken noodle soup for you here, ranging from the classic you already know and love to versions you may be less familiar with. You can make chicken noodle in your slow-cooker or your instant pot, or swap in turkey for the chicken (GREAT for holiday turkey leftovers). Want even more flavor? Try the Thai take on chicken and noodle, khao soi—coconut milk, fish sauce, and lemongrass come together to take the basic comfort soup to the next level.
What else can you do with egg noodles? Stroganoffs are another popular option for using egg noodles, so we’ve included a chicken and beef version, as well as a few plays on the flavors, like our stroganoff burgers (yep, noodles as buns) and our chile-braised beef with noodles (think spicy stroganoff). Sweet noodle kugel is another classic, though you may not have encountered it if you’re not Jewish—it’s a Shabbat dinner staple in many homes. Egg noodles are also popular in Eastern Europe, so we’ve included a few recipes inspired by that region, like beef and chicken paprikash (a paprika-based dish similar to goulash) and haluski cabbage and noodles. As you can see by their culture-wide popularity, egg noodles truly are versatile. Check out our favorite weeknight pasta dinners and try swapping them in for your favorite noodles.
Homemade chicken noodle soup is already easy to whip up, but tossing all of your ingredients in a slow cooker makes it even easier. Tip: If you make chicken soup and feel like it's lacking something, this can typically be not enough salt. Finish the soup with a pinch of flaky sea salt, a drizzle of olive oil, and a squeeze of lemon for a brighter, punchier flavor.

Originating from Chinese Sichuan cooking, Dandan noodles were named for the carrying pole (aka dan dan) that street vendors used to carry baskets of noodles and sauce. While sometimes served as a soup in China, American versions are usually more saucy than soupy, and often include sesame paste, peanut butter, or tahini, like our recipe here.

This humble Eastern European dish is a combination of caramelized cabbage and onions, tossed with rich egg noodles; savory, crisp bacon; and of course, butter. The most traditional Haluski recipes keep it simple with cabbage, onions, bacon and noodles, but this one adds a punch of acidic lemon and fresh garlic to cut through some of the fattiness.

Moral of the story: Start checking after 15!
