Cabbage is a readily-available, highly nutritious inspiration for make-ahead salads. I created the first very simple salad to use a favorite prepared poppyseed dressing, and the popular Asian salad is adapted from one of the many community cookbook versions from years ago. Both recipes feed a lot of people and can easily be halved — so worth the effort!
