Savory, sweet, spicy, and everything in between. Filipino cuisine does it all deliciously. And did you know that you can make amazing Filipino dishes from home? Pancit Palabok is a popular dish to serve for special occasions and consists of rice noodles usually accompanied by rich pork and shrimp sauce and garnished with smoked fish, eggs, and crumbled chicharron. However, this vegan version is just as delicious and flavorful. Once you make this recipe, you’re going to be hooked – it’s seriously that good.

Pancit palabok is a Filipino dish that’s great for potlucks, parties, and gatherings. The traditional version contains rice noodles that are served with seafood and blanketed in a fishy sauce. This vegan version by RG Enriquez replaces seafood with tofu and vegetables, and the rice noodles are blanketed in a creamy, savory sauce.

Pancit, the Filipino word for “noodles,” is a stir-fry dish that can be made with any type of noodle. In this vegan Pancit recipe, rice noodles are stir-fried with vegetables and tofu. As they cook, they’re seasoned with tamari, fresh ginger, and vegetable broth. It’s so fragrant and flavorful––you will be amazed. Vegan Pancit is a simple dish that makes a great weeknight dinner!
