This recipe was submitted by L.T. of Georgetown, who writes, “This recipe is proportioned for serving two people. I received it from my aunt, who usually eats alone; this recipe gave her servings for two meals. The cream cheese and cottage cheese nicely balance the rest of the ingredients in this hearty casserole.”

Hamburger Noodle Bake for Two

1/4 cup (2 ounces) cream cheese, softened

1 tablespoon thinly sliced green onion

1 tablespoon chopped green pepper or sweet red pepper

1. Cook noodles according to package directions.

2. Meanwhile, in a large skillet, cook beef and onion until meat is no longer pink; drain. Remove from the heat.

3. Stir in the tomato sauce, sugar, salt, garlic, salt and pepper.

4. In a small bowl, combine the cottage cheese and cream cheese, sliced green onion, green or red pepper, and sour cream.

5. Drain noodles; place half of the noodles in a buttered 1-quart baking dish. Spoon half of beef mixture over the top.

6. Layer with cottage cheese mixture and remaining noodles. Top with remaining beef mixture; sprinkle with Parmesan cheese. Cover and bake for 20-25 minutes or until heated through.

Q: I like to make my own homemade icing for cakes or cupcakes, but for some occasions I just don’t have the time to put everything together for homemade. Any suggestions on how to cut down the time of making icing and still have it taste creamy and good?

A: Try this one: It’s a terrific time saver and everyone might think it’s homemade.

Mix a can (any flavor) of store-bought frosting with an 8-ounce tub of whipped topping. Mix together well until it’s nice and creamy and easy to spread. I’ve found this works best on sheet cakes – it might be too slippery for layer cakes.

It’s a good idea to keep a peeled onion in a glass jar (such as a pint-size glass canning jar or other type) in your refrigerator. It comes in handy, such as when you need a small amount of chopped onion for a recipe or a slice of onion on a hamburger. In a glass jar, no onion fumes are emitted into the rest of the refrigerator.
